USDA Beef Grades (best to least):
- Prime - most marbling, best flavor
- Choice - still great quality
- Select - least marbling, can be tougher
Quick myth-buster: Angus is a breed of cow, not a grade. Angus beef can be Prime, Choice, or Select!
What about Wagyu? Wagyu literally means "cow" in Japanese. These special Japanese breeds are famous for their incredible marbling. American Wagyu is simply these Japanese breeds raised in America.
More marbling = more tender and flavorful steak. Simple as that!
