The Aging Secret
Here's something surprising - fresh-off-the-boat tuna doesn't taste great! Just like a good steak, tuna needs to be aged for at least 3 days, wrapped in paper to slowly remove water and intensify the flavor.
Cutting the Right Way
Always cut against the grain - perpendicular to the lines in the fish. This breaks the tissue and makes it much easier and more enjoyable to eat.
"Sushi grade" at the supermarket usually just means it's been sliced a certain way - not a special quality!
