Not all fat is bad - quality matters more than quantity.

What makes fat high quality?
It starts with how the animal is raised. Wagyu cows in Japan eat special diets including alfalfa and beer, and receive careful attention every day.

The melt test:
High-quality fat from Wagyu beef or Iberico pork melts at body temperature - it feels like water when you touch it.

Why this matters:

  • Low-quality fat stays solid and can stick to arteries
  • High-quality fat contains more beneficial cholesterol
  • Better for your heart overall

The way an animal is raised directly affects the quality of fat in its meat.
