What you cook eggs in makes a big difference to the final result.
Butter tips:
- Contains water, sugar, and fat
- Sugar caramelizes when heated, great in small amounts
- Add a little oil to prevent burning
Best oils for high heat:
- Peanut oil, rice bran oil, grape seed oil
- Avoid cotton oil (GMO concerns)
Every oil has a smoking point. Once it smokes, throw it out!
Eggs and your health:
- Eggs contain both good and bad cholesterol
- Avocados and olive oil help keep balance
- Fat is the number one fuel for your brain
- Active people can enjoy 2 to 3 eggs per day
