🔍 How to Pick a Fresh Egg

LIP #269
Feb 05, 2026

Here's something surprising, in Europe, eggs are not kept in the fridge at the supermarket! By the time you buy eggs at a regular store, they're already 3 to 4 weeks old.

How to check if an egg is fresh:

  • Crack it onto a flat surface
  • Fresh egg whites stay in a tight circle
  • Older egg whites spread out and go watery
  • Fresh eggs have a bright orange yolk that stands up tall
  • Older eggs have a flat, pale yellow yolk

Important: Never freeze a whole egg! Ice crystals break down its structure, turning it into an unusable watery mess.
