Poached eggs require fresh eggs and proper technique for success.

Essential steps:

  1. Add one tablespoon of real vinegar (apple cider or white wine) to water
  2. Heat water until just before boiling (bubbles forming at bottom)
  3. Create a gentle whirlpool in the water
  4. Crack egg into bowl first, then add to spinning water
  5. Cook one egg at a time using separate pans for multiple servings

The egg white cooks quickly and proteins surround the yolk protectively. Even if the egg seems to break apart initially, have confidence - it will come together. The vinegar helps proteins coagulate faster, creating that perfect poached egg with runny yolk.
