Peeling Technique:

  1. Score a cross at the bottom
  2. Blanch in boiling water for 30 seconds
  3. Transfer to cold water

For Sauce Making:

  • Use plum tomatoes (best choice)
  • Remove seeds and skin to reduce bitterness

Simple Tomato Sauce Recipe:

  • Quarter tomatoes
  • Add olive oil and herbs (basil/oregano)
  • Cook on low heat for 3-4 hours
  • Don't add water
  • Store in jars

Pro Tip: Use Maldon salt as finishing salt - its pyramid flakes create flavor "explosions" rather than uniform saltiness.
