Fresh eggs are key - they have:

  • Bright orange yolks from hens eating natural diets
  • Yolks that stand up tall rather than spreading flat

In Europe, eggs aren't refrigerated because they naturally come from hens without refrigeration. The best eggs come from farms or farmers' markets, especially free-range options where hens eat worms and insects, producing those coveted orange yolks.
