Important rule first: always cook shiitake mushrooms - eating them raw can cause bloating and stomach issues.
Fun ways to prepare mushrooms:
- Brunoise (tiny dice): Chop mushrooms into very small pieces to create a meat-like texture, perfect for vegetarian bolognese
- Mushroom tartare: Raw chopped mushrooms with olive oil, lemon, soy sauce, and Tabasco
- Mushroom stock: Simmer stems in water to make a flavorful broth for cooking rice or pasta
Using dried mushrooms:
- Soak in warm water for 2 to 3 hours
- Or soak in white wine for a richer flavor
- Perfect for making creamy risotto!
