🍳 Tomato Techniques Every Home Cook Should Know
A few simple techniques can completely transform how you cook with tomatoes.
Maldon salt is a finishing salt with pyramid-shaped flakes that create bursts of flavor. Use it at the end of cooking, not during.
How to peel tomatoes:
- Score a cross at the bottom, blanch in boiling water for 30 seconds, then move to cold water
- Or carefully use a sharp knife to remove the skin
Removing skin and seeds reduces bitterness and helps digestion.
Tomato tartar: Use only the meaty part, then mix with chopped vegetables, Tabasco, honey, mustard, olive oil, and sesame oil.
Simple tomato sauce:
- Quarter tomatoes
- Add olive oil and basil or oregano
- Cook on low heat for 3-4 hours
- No water needed
- Store in jars in the fridge
