Kaiseki is a style of eating created thousands of years ago in Japan by Buddhist monks who ate simple, clean meals to nourish body and soul.

The core rules of Kaiseki are:

  • Eat whole foods straight from nature
  • Avoid processed or artificial foods
  • Only eat what is in season right now

Why does it matter?
