The Golden Rule: Eat in the Right Order
A glucose monitor shows us that eating the same foods in different orders creates very different results in your body.
The Kaiseki eating order:
- Fermented or sour opener (like pickles) - wakes up your stomach
- Fiber-rich vegetables
- Protein and fat
- Carbohydrates last
This is the opposite of most Western meals where bread and pasta come first!
Why does this work?
Starting with carbs causes a blood sugar spike and crash, leaving you tired and hungry again fast. Following the Kaiseki order keeps blood sugar steady and leaves you feeling light and energized.
The French call their version of the opener an aperitif - a small sour or bitter bite to prepare the body for eating.
