  • Fermented carrot water: Mix water, salt, and carrots, wait two weeks for a complex sour flavor you cannot fake
  • Salt enhances sweetness: A pinch of salt on chocolate or sweet puree makes it taste even sweeter

Chef Danny also says a dish is never truly finished. Chefs keep improving even after sending food to the table.

The goal is always to create tension in a dish, mixing contrasts like cooked and raw, soft and crunchy, to keep the diner engaged and surprised.
