You know sweet, sour, salty, and savory - but there's a fifth taste called umami, and it's the secret behind amazing Japanese food!

Umami comes from glutamic acid found naturally in:

  • Kelp and seaweed
  • Dried fish
  • Miso paste
  • Soy sauce

What is Dashi?
Dashi is a simple but powerful Japanese broth made from kombu (dried kelp) and bonito flakes (dried fish shavings). These two ingredients together create an incredibly rich, umami-packed base.

Building a healthy ramen bowl:

  • Start with bone broth
  • Add 1 tablespoon white miso (Shiro miso)
  • Add 2 tablespoons fermented soy sauce
  • A small amount of pork belly for flavor
  • Fresh vegetables
  • Skip the processed flavor packets!
