You know sweet, sour, salty, and savory - but there's a fifth taste called umami, and it's the secret behind amazing Japanese food!
Umami comes from glutamic acid found naturally in:
- Kelp and seaweed
- Dried fish
- Miso paste
- Soy sauce
What is Dashi?
Dashi is a simple but powerful Japanese broth made from kombu (dried kelp) and bonito flakes (dried fish shavings). These two ingredients together create an incredibly rich, umami-packed base.
Building a healthy ramen bowl:
- Start with bone broth
- Add 1 tablespoon white miso (Shiro miso)
- Add 2 tablespoons fermented soy sauce
- A small amount of pork belly for flavor
- Fresh vegetables
