Stop noodles from sticking - the ice bath trick:

  1. Prepare a bowl with ice water and neutral oil
  2. Use soy oil (not olive oil - it changes the flavor!)
  3. Transfer noodles straight from boiling water to ice water
  4. Move them around to prevent clumping
  5. The oil coats each noodle so they slide freely

Water vs. Fat - a game-changing cooking lesson:

Some flavors only dissolve in water, others only in oil!

  • Garlic in water releases sweet and sharp flavors
  • Garlic in oil (at 170F) releases sulfur compounds - a totally different taste!
  • Sugars are water-soluble and move into cooking liquid

Ramen is great any time of day:

  • Post-workout recovery
  • Easy late-night meal
  • Protein is already broken down for easy digestion
