Stop noodles from sticking - the ice bath trick:
- Prepare a bowl with ice water and neutral oil
- Use soy oil (not olive oil - it changes the flavor!)
- Transfer noodles straight from boiling water to ice water
- Move them around to prevent clumping
- The oil coats each noodle so they slide freely
