Fermentation helps break down complex carbohydrates that are difficult for human digestion, with bacteria similar to our gut bacteria doing the work before we eat.

Optimal Gut Balance:

  • 85-90% good bacteria
  • 10-15% pathogens

Critical pH Factor:
The gut must maintain an acidic pH below 4.5 where harmful bacteria like salmonella and botulism cannot survive. Good bacteria produce acid to maintain this protective environment.

⚠️ Important: While there's a common belief that the body should be alkaline, different body parts require different pH levels - the gut and colon need to be highly acidic for healthy bacterial balance.
