Cooking Methods by Bone Type:

🥩 Red Meat & Chicken: Roast bones first for enhanced flavor

  • Red meat: Cook 2-3 hours
  • Chicken: Cook 1-2 hours

🐟 Fish: Never roast! Cook directly in water for 45 minutes only

Fat Removal Benefits:

  • ✅ Keeps calories low (30-70 per portion)
  • ✅ Prevents fat breakdown during long cooking
  • ✅ Maintains better flavor (prevents rancidity)
  • ✅ Creates cleaner taste profile

Process: After cooking, refrigerate overnight. A fat layer will form on top - simply remove this layer for a lighter, more nutritious soup.
