Focaccia is basically a bread pizza - thick, fluffy, and loaded with olive oil. Chef Danny serves it as the signature bread at his restaurant Babette Miami, choosing to perfect just one bread instead of making many.

Chef Danny calls himself a pizza chaser and says every chef he knows loves pizza. Late-night chef hangouts in NYC included places like Blue Ribbon and Napoleon Pizza.

Focaccia vs Pizza Dough:

  • Focaccia uses a 1:1 water-to-flour ratio (very wet)
  • Pizza dough uses about 1:0.7 (less water)
  • More water = fluffier, airier result

The secret to great focaccia is getting the right oil and air inside the dough.
