At Okinawa University, Danny studied two powerful fungi:

  • Aspergillus - used to make soy sauce, miso, and sake
  • Monascus - gives red rice its color and is common in Chinese cooking

Together, they create tofuyo, a special Okinawan fermented tofu almost unknown outside the island.

Here is the cool science part: Monascus produces something called Monacolin K, which has the exact same structure as a cholesterol medicine called Lovastatin - but it is completely natural with no side effects.

When both fungi work together, they can:

  • Lower cholesterol
  • Help fight cancer cells
  • Control blood sugar
  • Fight infections

That is why tofuyo is served in tiny pieces as an appetizer - a small bite with huge health benefits.
