๐ฌ The Amazing Science of Fermented Tofu
At Okinawa University, Danny studied two powerful fungi:
- Aspergillus - used to make soy sauce, miso, and sake
- Monascus - gives red rice its color and is common in Chinese cooking
Together, they create tofuyo, a special Okinawan fermented tofu almost unknown outside the island.
Here is the cool science part: Monascus produces something called Monacolin K, which has the exact same structure as a cholesterol medicine called Lovastatin - but it is completely natural with no side effects.
When both fungi work together, they can:
- Lower cholesterol
- Help fight cancer cells
- Control blood sugar
- Fight infections
That is why tofuyo is served in tiny pieces as an appetizer - a small bite with huge health benefits.
