Cooking Guidelines:

  • Most mushrooms can be eaten raw, except shiitake (always cook!)
  • Raw shiitake can cause digestive issues due to high polyol content

Creative Preparations:

  • Mushroom tartare with olive oil, lemon, soy sauce
  • Finely chopped mushrooms as meat substitutes
  • Dried mushrooms: Soak 2-3 hours in warm water or wine

Health & Nutrition:

  • Contain zinc, potassium, magnesium
  • For sensitive digestion: Start with oyster, baby bella, portobello
